Before I go any further, I have to declare that this is not my original recipe. I found it years ago on the internet, made it once, and it thankfully stuck in my head as I’ve never been able to find it since. The original post was written by a very witty guy who described it, I think, as “the greatest fishfinger sandwich known to man”. Or something like that!
Anyway, Pete and I LOVE this recipe. It’s quick, easy and totally adaptable so you can add whatever you like, anything goes.
Ingredients – for 2 people
- 10 fishfingers
- 2 spring onions, finely chopped
- 1 red chili, deseeded and finely chopped
- juice of 1 lemon
- 1 garlic clove, crushed
- mayonnaise
- pepper
- A baguette
Method
Gently fry the fishfingers in a little olive oil until almost cooked. This should take no more than a few minutes, turning occasionally
In the meantime, finely chop the spring onions and chilli and add to a mixing bowl along with the crushed garlic
Remove the fishfingers from the heat and pop them into your mixing bowl, crushing with a fork and mixing well.
Add the lemon juice and a generous quantity of mayonnaise and mix, finishing with some pepper
Return the mixture to the frying pan and heat through over a low heat
Cut the ends off your baguette and cut it in half, before slicing each piece lengthways. Butter the halves then spread the fishfinger mixture liberally onto each piece of baguette, making an open fishfinger sandwich. Obviousy you can serve with whatever you like but they are ridiculously dense and filling so we never manage anything else.
